The soulful, rich flavors of our no-compromise whiskey begin with our use of only heirloom and heritage grains. Modern agricultural has no interest in these low-yield, finicky grains, yet we could not create the singular profile of each Laws Whiskey without them. We are dependent on the two family-owned farms – the Cody’s in the San Luis Valley and the Ohnmacht’s out on Colorado’s eastern plains – willing to cultivate these specialized grains for us.

Our 2018 Chalk Hill Chardonnay boasts toasty vanilla and spice due to time spent in seasoned French oak barrels during fermentation. During the 11 months of barrel aging, we regularly stirred the lees in barrel, which imparts an elegant fullness and creamy texture on the palate. In the glass, the wine is both creamy and crisp, with flavors of golden pear, vanilla, Meyer lemon and a hint of minerality on the long finish. Enjoy over the next one to three years with soft cheeses, fresh crab or roasted pork loin.

This is a family journey. We welcome you to join us. We planted the Halleck Vineyard in 1993, the first in the hills of Sebastopol, western Sonoma County. Intended as a college fund for our sons, in 2002, we earned #1 Pinot in the United States.
In 2019, Halleck Vineyard was again judged “BEST OF CLASS” in the San Francisco Chronicle Wine Competition, the largest in North America.  Sunset Magazine anointed our Sauvignon Blanc “BEST OF CLASS” in the United States, and the California State Fair judged our Dry Gewurztraminer #1 White Wine in California.

Winery Notes
This extraordinary Chardonnay from Sobre Vista Vineyard in Sonoma Mountain AVA offers more than a hat-tip to its sister in the north of Burgundy, Chablis. Like a Premier or Gran Cru, it is medium-bodied, bright with crisp acidity and very low alcohol, having been picked before the fires of 2020, thus avoiding any contact with smoke. It is complex showing notes of apple, pear and citrus; it displays mineral characteristics with a hint of salinity on the back of the palate, for a mouth watering complement to seafood or chicken. There is none of the big oaky butteriness one expects from California Chardonnay. This wine has been lightly barreled to fill out the mouthfeel, but has avoided the pitfalls of a typical oaky wine. If you love a White Burgundy, this is a California Chardonnay for you.

Winery Notes
This Dry Gewurztraminer’s expressive nose is full of ripe lychee, rose petals and a hint of vanilla. There are bright gentle acids that blend with minerality on the midpalate, offering flavors of lychee, rose petals, and a touch of floral and ginger with a lingering cleansing finish of fine spice. Absolutely stunning with Indian curry, ceviche, a fine chicken liver pate, roasted chestnuts, or Thanksgiving turkey.

Winery Notes
The garnet color is jewel-like in its transparency, color and brilliance. The wine leads with aromas of cherries, including a hint of clove, cinnamon, pepper. The wine delivers with a full frontal assault of delicious fruit, yet still manages to be delicate and refined. The red fruit combines with the spice, then delivers an earthiness, reminiscent of a forest floor, on the mid palate that fills the mouth. There’s long lingering finish of both black and white pepper, trailing with fruit notes.

This wine has a bright nose of fresh cranberry, red raspberry and strawberry mixed with spice notes of white pepper and earthen floor. The brightness carries through to the palate, filled with flavors of pomegranate mixed with a panoply of red fruits, spices, white pepper with a subtle rich minerality. The mouth-feel integrates earthiness with the fresh fruit and fine tannins in the mid palate. The finish is long and rich, revealing silky tannins combined with emerging cherry, gentle minerality, lustrous acidity and white pepper. Tasting Notes from the 2017 Vintage. Deep garnet hues, transparent and rich. Nose is a blend of red fruits, cherries and minerals. Leads with full rich flavors of cherry, a mid-palate of minerals and spice with a long rich finish. Great mouth feel of silky texture, opulent, unctuous.

Winery Notes
Hillside Cuvee is bright, light and glimmers in translucent rubies. The nose hints of earthiness reminiscent of a fine Burgundy, oftimes described in French as sauvage or animal. But it also carries bright aromas of fresh cranberry, red raspberry and strawberry mixed with spice notes of white pepper and earthen floor. On the palate, it leads with red fruits like pomegranate and fresh cranberry, with hints of raspberry. The brightness carries through, filled with flavors of pomegranate mixed with a panoply of red fruits, spices, white pepper with a subtle rich minerality.
