Type of soil: volcanic / sand Vinification: Grapes harvested by hand at full ripeness are severely selected and then destalked and pressed. The fermentation takes place in steel at controlled temperature with maceration 8 days on skins. The wine is always aged in surplus steel for 6 months and at least 2 months of aging in bottle. The Piedirosso vine: A red grape variety most cultivated on Mount Vesuvius is known by the dialectical term "Per" and "Palummo", which describes a morphological characteristic of the rachis that sees the pedicels of colored grains of red as those of a paw of dove. Very vigorous vine, with late ripening with yields are very low. Medium size of bunch, generally spatula, medium-large grapes, spherical with large purple violet skin.
