Kobal Family Bajta Blaufrankish Sparkling Rosé Petillant Naturel

2023 Vintage- Bajta is the all natural project from Kobal vigneron Bojan Kobal. The Stajerska wine region is known for its steep slopes and diverse soil types including sand, clay and marl. Bojan feels it is perfect for producing his low intervention Bajta wines. The Blaufrankisch Pet Nat sees about 4 hours on the skins and then is bled saignee-style. Spontaneus fermentation takes place with native yeasts and the wine is bottled half way through the process with its micro-flora and finishes its fermentation in bottle. A classic Pet Nat style showing off its fresh red fruit and bright acidity. Don't get too fancy with the pairings; serve it as an aperitif or maybe with some grilled pork chops. *Natural Wine*
