The Rums of Mexico Caldo is part of the MXRUMS project focused on traditional Mexican cane spirits made from fresh-pressed sugarcane juice rather than molasses. It is produced in Veracruz by Orlando Vázquez, who works with locally grown cane varieties and a fire-heated copper still to create a spirit that emphasizes raw agricultural character and terroir expression.
The fermentation and distillation approach is intentionally rustic, designed to preserve the natural vegetal, smoky, and fruit-driven qualities of the cane rather than refine them away.
