Kräusen is an American lager made with domestic malt and corn. Krausening is a technique brought over by German brewers to the Midwest in the 1800s. It is a way to carbonate beer that is aging in a lagering tank by adding a small amount of fermenting beer, or krausen. The natural carbonation that results creates a very fine bubble and tight foam. Many large Midwest breweries used to krausen their lagers. We thought it was time to bring it back.
