Curves In Time Blend 2 features a blend of 100% spontaneously fermented beer aged for 1 and 3 years, respectively. Each batch spent a night in our koelschip to naturally cool and inoculate with local microflora, before spontaneously fermenting and aging in oak barrels. After blending, we conditioned the beer on local Door County peaches from Barnard Farms—and allowed the beer to rest and referment on the peaches + their pits for many months, before naturally refermenting over many more months in the bottle & keg. Notes of juicy + spritzy peach candy, watermelon rind, and lemon zest—with rustic funk + medium acidity.
