La Venenosa Tabernas Edición III is produced by Tabernero Jose Salcedo Rios in El Mosco, Sierra Occidental, Jalisco using Chico Aguiar (a type of Agave angustifolia) and Agave maximiliana. The agaves are cooked in an above-ground adobe oven, fermented in Tinaco plastic, and double-distilled in a stainless steel and copper still.
Tabernas are small-scale, rustic, and often open-air distilleries located in Jalisco, Mexico, where artisanal agave spirits have been produced for over 500 years. While they serve the same function as a palenque in Oaxacan mezcal production, tabernas are specific to the Jalisco region and represent a deeply traditional, non-industrialized method of creating raicilla.
