September 2025 harvest-inspired batch from mezcalero Manuel Aquino García in Logoche, San Luis Amatlán, Miahuatlán. During the corn harvest, Manuel was struck by the aromas of dried cornstalks as the ears were separated — he gathered ~4 kg of dried husks and stalks and folded them into the second distillation of a capón Espadín (Agave angustifolia + Zea mays) run. Eight-day mesquite-fired conical earthen oven roast, machete + mechanical maceration, 48-hour dry ferment then eleven wet days in a food-grade plastic tub (~500 kg cooked agave, 600 L well water, native yeasts), 2x copper pot still. Composed 60 liters with a cordón cerrado; aromas that provoke nostalgia for roast corn and hand-made tortillas. Bottled at 47.4% ABV. Just 60 bottles, Illinois-only allocation.
