This is a truly special and collaborative expression, the Neta Arroqueño & Sierra Negra Capón Ensamble, distilled by Maestro Nicolás García Vásquez in Logoche, Miahuatlán. This spirit is a testament to the traditional socio-cultural and economic relationships between agave growers and distillers.

The two rare Agave americana varietals, Arroqueño and Sierra Negra, were carefully grown and capón-harvested, meaning their flowering stalk (quiote) was cut to retain all sugars and nutrients in the piña (heart). This process maximizes the agave's complexity and richness. They were harvested six months after their flowering stalks were cut in October 2022, when they were eight years old. Though grown in Ejutla on rocky white limestone soil, the growers returned the mature agave to Logoche for the craftsmanship of Nicolás and his family.

Distilled twice in copper pot stills in November 2022, this complex ensamble was meticulously composed from a careful mix of heads, hearts, and a high-proof cut of tails. This powerful, high-proof release clocks in at 52.3% ABV.
